Millets have immense health benefits , like high fibre content, high protein content, help in lowering BP, reducing risk o heart attacks, reducing severity of asthama, reducing frequency of migraines, hydrating colon. Millets are gluten free & provide nutrients like Magnesium, Calcium, Manganese, Tryptophan, Phosphorous, Fiber, B Vitamins, Anti Oxidants. One of the ost common varieties of Millets is Proso. In Hindi, its known as Barri, Panivaragu in Tamil, Varigulu in Telgu & Baragu in Kannada.




We present to you a recipe of Proso Millet.

Proso millet 1/4 cup
Yellow split green gram dal 1/4 cup
Cumin seeds 1/2 tsp
Black pepper corns 1/2 tsp
Turmeric powder 1{4 tsp
Rock salt as per taste
Curry leaves 2 sprigs
Cashew nuts handful
Pure desi cow ghee 1/4 cup

Method of preparation
Rinse and soak proso millet for 2 hours
Dry roast yellow dal for 2 minutes
Add 3 cups of hot water and a pinch of turmeric and a tsp of ghee to a pressure cooker.
Add drained millet and roasted dal.
Add salt and pressure cook till soft.
Hear rest of the ghee in a pan. Fry cashews till golden. Take it out.
To the same ghee add cumin pepper corns curry leaves and asafetida and fry.
Add thus to pongal and stir well.
Garnish with fried cashews.
